Ingredients
1.5 lb. Chicken Breasts, cut into 12 chunks
2 tsp. Seasoning Salt
1.5 cups Buttermilk
2 tbsp. Pickle Juice
2 tbsp. Hot Sauce, or to taste
2 cups All-Purpose Flour
1 cup Cornstarch
1/2 tsp. Baking Powder
2 tsp. Garlic Powder
1 tsp. Onion Powder
1 tsp. Chili Powder
2 tsp. Paprika
1 tbsp. Powdered Sugar
1 tsp. Black Pepper
Peanut Oil, as needed for frying
16 oz. Coleslaw Mix
1/4 Red Onion, thinly sliced
2 tbsp. Apple Cider Vinegar

3/4 cup Duke’s Mayonnaise
1 tbsp. Dijon Mustard
2 tsp. Granulated Sugar
1 tsp. Celery Seeds
Salt + Black Pepper, to taste
1 cup Chopped Bacon, optional
12-Count King’s Hawaiian Sweet Rolls, cut in half lengthwise.

To Assemble the Sliders
Directions
Place chicken in a large bowl and add the seasoning salt, buttermilk, pickle juice, and hot sauce. Mix to combine and allow to marinate for at least 30 minutes in the refrigerator. In a second bowl whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, powdered sugar, and black pepper. Set aside.
Meanwhile, prepare the coleslaw by mixing all ingredients in a large bowl. Set aside in the refrigerator until you’re ready to assemble the sliders.
Heat 3 - 4 inches of oil to 350F in a large stockpot. Working in batches, add about 4 - 5 pieces of chicken to the oil and fry between 6 - 8 minutes, or until the internal temperature has reached 165F and the external is lightly golden. Remove and set on a wire rack to slightly cool while you work on the next batch.
To assemble the sliders, smear the bottom half of the rolls with mayonnaise. Top each slider with a piece of fried chicken, then cover them all with coleslaw. Cover with the top rolls and cut into 12 sliders. Serve immediately.
